Have a bunch of leftovers? Try these easy recipes

Well, it's over.

And if you're like me, you've got a fridge full of leftovers. And who wants to eat Christmas dinner over and over and over again.

My ex-husband always wanted us to do that, and it drove me crazy, so I came up with some simple recipes to spice it up.

Leftover turkey recipes:

  • Turkey & Stuffing Muffins - Mix the chopped turkey with leftover stuffing and a few other things and bake. Super simple and delicious.
  • Turkey Enchilada Casserole - I love this Mexican-inspired layered casserole.
  • Turkey Salad - This is the simplest recipe on the list, but it has a special ingredient that punches the flavor up a notch. I love this on Ritz crackers, but my kids eat it on sandwich bread.
  • Turkey Quesadillas - These are also simple and easy, and they use up lots of turkey in a quick, Mexican- inspired meal.

Leftover ham recipes:

  • Cheesy ham and cauliflower casserole - This is my favorite leftover recipe. Tons of cheese, roast cauliflower, and cubes of ham all blend together in the best casserole you'll ever eat.
  • Ham & apples with rice and carrots - This sounds strange, but I promise it's good! The apples and carrots add sweetness to the savory ham.
  • Ham & cheese omelet roll - I love an omelet roll. Cut up the ham into small cubes and mix them with a dozen eggs and a few other ingredients. Bake that in a sheet pan, then while it's still super hot, sprinkle it with a heavy layer of cheese and roll it up. It's so good. I might make this for dinner tonight.
  • BBQ ham sandwiches - These are typically made with deli meat, but you can cut up leftover ham to do the same thing. It's a little like a sloppy Joe with cubes of ham instead of ground beef. Serve it on a sandwich roll for a 15 minute supper.
